Bacon Wrapped Cream Cheese Stuffed Chicken

For whatever reason, boneless, skinless chicken seems to be decently priced in our local grocery stores over the past few weeks.  I noticed this in our regular grocery store as well as Super Walmart, where I stopped last night.  If you are also enjoying some good sales on poultry this week, here is a quick and easy recipe that is affordable and delicious.  Although my husband never (ever) cooks and doesn't really know how, he happens to have the day 'off' today while I work full time so little does he know that he is going to be doing some of the prep-work for tonight's dinner!  I think he is capable of flattening and rolling a few chicken breasts though!


Bacon Wrapped Chicken

4 boneless, skinless chicken breasts
1 - 8 oz. package cream cheese (with or without chives)
8 strips bacon

Preheat the oven to 375.  Flatten the chicken breasts by pounding them between two sheets of plastic wrap or parchment.  You will want them about 1/2 inch thick to make it easier to roll.  Dot each chicken breast with 2 oz. cream cheese and roll up, securing the chicken package with two strips of bacon wrapped around each.  Place seam side down in a pan you have sprayed or oiled.  Sprinkle with salt and fresh cracked black pepper.  Bake 45 minutes.  To brown them and finish crisping the bacon, place under the broiler for about 3-4 minutes until crisp and golden.
