One of the quick, easy snacks my kids and husband like to see that I've made is a pan of dark chocolate, fudgy brownies. Pictured above is a pan fresh and hot out of the oven - the right half with nuts and the left half plain as my family doesn't share in my affinity for walnuts. LOL.
The great thing is that they are so quick and easy but frgual too! For about $1 you can make a large 9X13" pan of brownies to feed your family for a couple days or take to a potluck!
Fudge Brownies
1 dark chocolate cake mix
1 /2 c butter (1 stick)
3/4 c evaporated milk
Combine cake mix, butter and milk in a bowl. Batter will be very thick. Spread in an ungreased 13X9 inch pan. Bake 40-45 minutes until the center is set. Cool in pan. They will continue cooking a bit while cooling so don't over cook.
For an even yummier treat (although this will add the cost by about $1) make them into caramel brownies!
Mix the cake mix and butter with 2/3 cup of evaporated milk. Place half the batter into the pan and bake for 15 minutes while you mix 1/3 c of evaporated milk with 35 unwrapped caramels and stir over low heat until melted. Take the brownies out, drizzle the caramel over the brownies, add about 2 cups of chocolate chips and then drop the remaining batter in teaspoon fulls all over the top. Return to the oven and bake another 25-30 minutes until the center is set. These are AMAZING!
