Earlier this week I went to Super Target to get some household things and a few groceries. Although we have a ton of vegetables I was hoping to get some meat, chicken and seafood but after pondering the outrageous prices they were charging I left without nary a chicken breast nor even ground turkey in my cart.
Since Super Target was also out of Velveeta (which was on our list for homemade mac and cheese) I stopped at our local Mom and Pop grocery in town and hit upon a great sale by accident. Boneless, skinless chicken breasts $1.79 a pound.
After some debate and cringing at the budget I had pretty much blown already after the Target trip I decided it was a worthwhile purchase and very much needed. I spent $21 and today I took out the packages and did some 'make ahead' freezer meals out of them. Let's see if I can recall what all I made!
1. Chicken Salsa Soup
2. Stuffed Chicken Breasts wrapped in Bacon
3. Crockpot Cream Cheese Chicken
4. Breaded Chicken Breasts
5. Bourbon Chicken
The goal is and was that I got 5 meals out of that $21 purchase which amounts to about $4 per meal and these are *huge* chicken breasts that will easily feed an adult with just a simple vegetable on the side (or in the case of the soup... cornbread!).
So... what great special is your local grocer running this week? Ground beef? Chicken? Seafood? Turkey? Pork Chops? Buy up and then make 4-5 meals out of it at home (or just put it in the freezer for a future date!)
The savings? Feels really good!
